William (Bill)  Lark

Bill worked as a Registered Land Surveyor in the 1980’s when he built and operated a hotel in Tasmania’s main ski field, Ben Lomond, with three friends. During this time Bill often wondered why someone wasn’t producing Single Malt Whisky in Tasmania.

In May 1992, Bill and his wife Lyn obtained the first Licence to Distil in Tasmania since 1839. From there Lark Distillery grew from the kitchen table and now employs over 20 staff and exports throughout the world.

Bill is proudly recognised as an industry leader encouraging the growth of the Australian Distilled Spirits industry and is now affectionately known as the “godfather” of the Australian whisky industry.

Lark Distillery was awarded Telstra Australian Small Business of the Year in 2014. Bill was personally awarded Hospitality Ministers Award for Excellence for Contribution to the Industry in 2015 and named “Ministers Champion” at the Tasmanian Tourism Awards in 2013. In March 2015, Bill was inducted, at Number 28, into the World Whisky Awards Hall of Fame in the United Kingdom. He is the first and only Australian inductee.  Bill is currently engaged as the Global Brand Ambassador for Lark Distillery.
